If you are prescribed to add more fibre through different colour veggies. But you are falling short of ideas on how to add them, as we find it challenging to eat a lot of salads.


Try out these interesting ways of adding veggies to your diet without getting overwhelmed by the fact of eating bowls and bowls of salads.


1. Sauté veggies - Stir different veggies like broccoli, mushroom, baby corn, bell pepper, zucchini and leafy greens. Season them with salt, black pepper and your favourite spices.

2. Dips and sauces - A very interesting way to add veggies is to add them in dips, sauces and dressings. Beetroot hummus, roast capsicum dip, salsa dip or a dip with fresh vegetable sticks like carrot, or cucumber and make them into snack options.

Whether it's white or red pasta sauce, enjoy a raging fan following pasta sauce by giving a healthy twist. Make Purée of veggies like pumpkin, carrot, broccoli, zucchini, cauliflower or lauki.


Snack on vegetables - And we don't mean potato chips or French fries. Your snacks should help you fill in between meals, so you don't starve at dinner. This way it will help you fill your vegetable quota. Try carrot or cucumber dipped in hummus or peanut butter.

3. Blend with Smoothies - Smoothies make a refreshing breakfast or snack. Green smoothies are loaded with vitamins and nutrients. Moreover, they are made with veggies like spinach or carrots which can be easily camouflaged with sweeter fruits such as bananas, pineapples or mangoes.


4. Add vegetables to your breakfast - Options like idlis, poha or oats can be made more nutritious by adding veggies. Parathas dough can be added with pureed veggies, Cheela batter can be added with grated veggies like carrot, beetroot and spinach to up the nutrient quotient.


Dals can be made more interesting by adding veggies like chana and lauki dal or sambhar.


Bhaji can also be made more interesting by adding loads of healthy and nutritious veggies.


5. Salads for meals: There is no better way to eat more veggies than eating a salad with fresh vegetables as your main meal. Include 3-4 varieties of greens and all of your favourite vegetables in your salad to include more veggies in your diet. You can also have them in the form of soup.
